Half price sale on farm direct hogs!

Given our recent sudden changes (previous job post) and loss of cash flow, we have decided the best path forward is to immediately liquidate the hog herd. What I mean by that is... Tremendous savings to you! We are offering our hogs for sale, farm processed, as whole or half , at half price!

There are three ranges of size available:

Smaller
Regular market size
Breeder

This is an unprecedented price! $2.50 per pound hanging weight.

Processing began this week and will continue into next week until the herd is down to a manageable size.

This will not only provide immediate cash flow, but also lower the feed bill and allow for our land to rest. We can plant the pig pasture in a nice covercrop while the herd is small.

Now is a great time to take advantage of the deep savings. Half price doesn't happen often!

Bacon is back in stock! Order yours now!

YES! finally, we have a good supply of our famous Little Sprouts Bacon... heavily smoked uncured unflavored bacon! Nothing added, not even salt! This is all thin sliced, in 10 ounce packages.

Why nothing added?  so that you can do whatever you want with it! Add flavor by just defrosting the bacon, add flavoring either in the bag or in the pan, and cook! It can be as easy as laying out the strips in a pan or tray, sprinkling with salt, black pepper,  and any flavors you wish (mustard, honey, maple syrup, brown sugar, cinnamon, red pepper, etc etc.

Bacon usually doesnt last long in stock, so we recommend getting as much as you can when its available.

Meat price restructuring is now complete! Enjoy the lower price!

As promised a short while back, we have drastically reduced our meat prices. DRASTICALLY! There are two reasons why this was possible.

First, we went through our yearly review of profit center cost and production, and discovered that  changes we had made to purchasing feed allowed an across the board 35% reduction in pork selling price.  yes.. 35%!

But wait.. there's more.. we have now completed our transformation from the current meat pricing model of "price cuts for what they can sell for" to a more farm style "price the meat based on what it costs to produce".  Basically we stopped comparing price to "everyone else" and instead based our price on our own farm,  and figured out what it takes to make this profitable. period.  Where most meat sales is based on the cut individually, we now base our totally on the cost to produce the overall animal that the cut comes from.



For instance, we have only 3 price levels:

1. Farm direct in bulk - $5 per lb (hanging weight)
 This is the price for buying a whole animal direct from the farm, in bulk, and paying separately for the butchering. This is the least expensive way to do it if you can handle the quantity of meat all at once.  Traditionally called "farm kill", it is where you have total control over what you get, save the most, and end up with a lot of meat all at once.

2. Plentiful USDA packaged cuts - $8 per lb (individual packages)
This price is for cuts that come "plentiful" like ground pork, chops, etc. Cuts where the cut produces much quantity.

3. Limited USDA cuts  - $10 per lb (individual packages)
This price is for cuts that come in very limited quantities, like ribs. There is only 2 full racks of ribs per animal. Due to the smaller quantity, the price needs to be slightly higher to cover expenses that cant be spread out across many buyers.

To make life even easier, we sell meats in approximate weights, not exact quantities. We round each package to the nearest half pound or quarter pound. Over time it all balances out and it saves a vast amount of time over individually priced packages.

So, please do browse through the online store. Some prices have dropped in more than half with the combined effect of both changes.  We are committed to bringing you the highest quality nutritious meats raised humanely, and at reasonable prices that allow you to save money while the farm is reasonably profitable.

Time will tell how this new pricing model works out, but we feel comfortable that it will be best for everyone!

Across the board 20% Pork Price Decrease!

Exciting news!

Each year we do a review of our operation and product pricing. Our mission is to ensure that our prices are reasonable, but based on actual costs to produce the quality of food we are committed to. Quality and nutrition always comes first.

Well... this year's review of the Hog production ended in the ability to LOWER pork prices across the board, by a whopping 20%!   That's right.. all pork prices are dropping by 20% of the meat price! This is NOT a special, not a limited time offer, this is until further notice!

The reason lies in last year's creative adaptions to feed. Since feed is the single largest cost for a hog production, we spent a lot of time working on supply, types, ability to grow, sprouting, etc. The overall combination of all these things worked and allows us to lower prices!  No change in quality, just passing the savings on to you.

These are the same pork bellies, from our pigs, that we make into the "cant keep in stock" little sprouts bacon. Now you can try your hand at making bacon at home. It's incredibly easy!

These pork bellies also go excellent in any soups, stews, or bean dishes. Cut it up and fry into veggies... The oil that renders out under heat is pure healthy lard.  You can rest assured that these pigs were raised right, no chemicals to accumulate in the lard, no toxins, nothing but pure natural saturated fat.

Sprouts.. Nutritional powerhouse

This is why we feed hogs and poultry sprouts instead of dry grain. Sure... Its more labor to sprout grain every day instead of just opening a bag of feed, especially at 400lbs per day... But 30x is worth it!

Surprisingly healthy hog bones!

We processed a few hogs this week for customers that bought a half or whole hog straight off the farm.  Lately we have been doing all the processing in a USDA plant, so we were not present to evaluate the health of the hogs. Yes, during processing you can tell quite a bit about the health of the herd, so on farm processing is quite helpful.  This week, we found a great surprise!

First off, the livers and organs looked beautiful. That's where obvious problems would show up. But all of these hogs were near perfect.

We noticed something else, a first... about the bones. A part of processing, of course, is to remove the feet.  Usually this is a process of clipping a few ligaments and "snapping" the feet off by hand. We have watched this done numerous times without fail. It normally doesnt take that much strength to pop the joints apart. Until now...

The butcher had a very difficult time! In fact, a few times they had to resort to a bone saw to separate the joints, as it was impossible to snap it apart with human strength.  The first one we did was a retired breeding sow, so I thought maybe it was maybe age. But no.. all the rest of the growers had the exact same strength in their joints.  Amazing!

It is not due to only breed, as we have processed this same breed mix several times before without these extra strong bones. The only explanation I can come up with is diet. These are the first set of hogs that have been fully produce fed. All the squash and pumpkin seeds are loaded with the goodness that build bones. In between produce batches these hogs were fed sprouted grain and fodder. Again.. a step well beyond commercial hog feed in nutrition. Sprouts and fodder are "live foods" as opposed to dead dry cracked grain used in commercial feed.  There just is no substitute for live food!

There is one other possibility that could contribute to extra healthy bones.... Leaves! Last year we collected a few tons of fallen leaves in the fall and spread them in a particular garden area. There was maybe 6 to 8 inches of leaves that decomposed and worked into the soil. Then in spring we planted that area with melon that never really made well (a different story)... but the weeds grew like CRAZY! especially.... purslane! it was thick and consistent .  When the pigs finally were let in to "clean up " that area, they ate all the purslane, roots and all.  How does this help? well... the leaves hold a high mineral content, because trees have very deep roots, and deep roots means bringing up deep minerals. Those minerals get deposited in the soil, and a prolific weed like purslane will pick up the minerals and make them bioavailable.

So , bottom line, we were impressed with the bone health of these hogs. what does that mean to you? Extra nutritious pork and broths made from the bones. We have never seen bones and connecting joints this healthy, so the broths and stocks made from these bones should be super nutrition!

The moral of the story is..  everything matters... your farmer can raise or lower the nutrition and health of your food by his processes...  What has your farmer done for you? Ask them!

Produce fed Hogs - a new approach

There are two main ways to feed hogs today... commercial hog feed or "scraps".

Commercial hog feed comes in lots of varieties, all intended to meet the nutritional needs of the animal at the lowest possible cost. In other words... they are formulated to "just barely" have enough nutrition for health.  Companies that produce these feeds do a lot of study on exactly hat the minimum needs are, to meet them without going over.   There is nothing necessarily wrong with this approach, as long as the nutritionist that produced the feed formula truly does understand hogs. The farmer is depending on the company to know what the hogs need and provide just that.

The other approach common in smaller operations is feeding hat amount to scraps or leftovers. This could be the non human edible produce from a garden, leftovers from a restaurant or grocery store, spent grains from brewing, Basically any semi edible food that is cheap and would otherewise go to waste.

We use both approaches from time to time. We have the commercial feed  from scratch and peck that is a soy free , organic, non-gmo whole feed.  But we use this sparingly. Then we collect scraps when available from a variety of organic sources.  But this is hit and miss.  We also provide a steady supply of greens (weeds) from gardening and on open pasture.  But, alas, that list of things is not enough to feed the number of hogs we now have (50 to 100).  So we needed a new idea to both save money and provide deep nutrition.

Enter.. produce. Fresh grown organic heirloom produce. We actually started a garden primarily for the hogs. Its not that the hogs get what isnt human useable... no.. these hogs get the first pickings, the best produce we can produce. Not scraps, but real food!

Summer time means zuchinni, pumpkin, beets. cucumber, melons. corn, etc. The things we can grow and feed on a continual basis.  As of right now, we harvest about nine to ten 40 gallon barrels  twice a week of these things.  That provides over half of the total feed for the hogs. Then we fill in with sprouted grain and commercial feed, plus the weeds from the garden or pasture.

Winter time we plant moistly roots and cold hardy plants... beets, carrots, rutabagas, kale, cabbage, kohlrabi, turnips, etc. These items allow us to harvest continually for most of hte winter, because they over winter in the ground.

You see, we debated about how long we can keep pumpkins for winter feeding, dehydrating zucchini to last through winter, etc. But then we realized.. why go to all that trouble when the ground itself is a great storage spot! Just grow the roots, leave them in the ground to slowly grow  until time to feed!  Low maintenance , low cost, no energy food storage!

Nutritionally this is optimum for hte hogs, because they get a true variety of fresh produce, grown right. We are not dependent on any single nutritionist or company to determine what our hogs need to survive. These hogs eat like they would in the wild, opportunistically browsing through whatever they find.

So next time your enjoying a Little Sprouts English Banger sausage, feel secure that our hogs are not fed a "formula"developed in a lab, nor are the fed leftovers or garbage... the hogs that produce that sausage are fed the best of hte best, locally grown fresh organic produce, grown just for them!
